With food trucks, the regulations require they prep all food in a certified prep kitchen (which is off-site), so they have to guess beforehand how much to make. Let's say 12,000 want to buy their food. They would rather sell out 10,000 orders, rather than prep 20,000 and only sell 12,000. I get it.
