It doesn't need the fat itself. I read something a while back on
a burger that some restaurant makes which is vegetarian, but they've figured out how to create or retrieve a certain molecule out of meat that basically makes it taste the way it does. They've put that into this burger and it tastes "beefy." I'm not sure how the ultra freakazoid vegans will feel about that, but who cares.

I didn't read the article so maybe that's actually what they're talking about. If so, my bad.
