Somebody shared this recipe on the board a few weeks back. Tried it today for dinner, can confirm it's (a) delicious, and (b) extremely easy. To whomever shared it:
If you have a sous vide cooker and like carnitas, give it a shot. Total hands-on time for me was about 20-30 min. Finishing them up in the broiler is a genius idea, it's quick and the pork ends up with a nice golden crisp all over. Recipe is straightforward and easy to experiment with, only advice I'd give is to not be shy when salting the pork, though if you do it's NBD since you can always add it later with no major issues.
Here's a (not great) photo of the results. We used a "ranchera" Herdez salsa which has chile ancho (aka dried poblanos) and jalapeños and has a slightly fruity flavor, but IMO the best match is a regular tomatillo-based salsa verde. Add onion, cilantro, avocado, and some lime juice and you're set.
