If you've never used the salt method to tenderize meat, do it. I took a couple of tough chuck roasts that had been in
the freezer for over a year, covered them in salt and let them sit for two hours, washed the salt off, then seared and cooked on high pressure in the instant pot. Incredibly tender meat and absolutely delicious.
