I'm happy for those of you that smoke meat the old fashioned way. I think that's great, but let's not pretend that you
are superior at understanding how time, heat, smoke, and meat work together. You learn all of these things naturally as part of the trial and error process of learning how to achieve a good result. Really your only claim of superiority is in knowing how much oxygen/wood to give your flame to keep the temp steady and the smoke flowing. That's it.
