there are several input methods for them, I use pinyin which is a phonetic spelling and then select the character
I want. As some explain, there are key boards that use radicals as a base. There is also what they call 5 step (which basically follow the primary strokes in any character that down to five levels can identify the one you want because of the multiple combinations of the strokes).

Also, using pinying, for instance if I want to say some words, I only need to enter the sequence of the first letters of each word and if I put in for instance a sequence of 4 letters, the bar displays the most common four character combinations (using proper grammer) that use those letters.

But more than anything, the Chinese use a lot of written input, you can select to WRITE the characters, and the recognition software recognizes even the standard 'cursive' methods most Chinese use. In addition, when writing, the bar will lead with the next potential character in the phrase. So you can write Wo and it will produce men which completes a full word in three taps.

The Chinese have it good, entering English is the real pain, there are times I'll enter my message in Chinese and then ask my app to translate it and cut and past it.
