My five and three year old control their iPads just fine but maybe that’s just them

And i think I prefer iPads in both cars and planes. I see no benefit to the in-headrest screen in either situation. And since I already own them for car trips, I wouldn’t include that cost in the cost to fly.

You do make a good point about live TV on the plane though. I’ve never really considered that before so I didn’t think about that.
