This. They're filmed in front of a live audience. Which changes all the timing
of jokes. Which is why it's stupid to just remove a laugh track to demonstrate that a show with a laugh track isn't funny. The timing is all different when you're not waiting for the audience reaction.
I've been to show tapings, they're actually a lot of fun. The actors and crew typically interact with the audience between scenes, and it's pretty interesting to watch a sitcom being filmed.
Only one quibble with your post, though--multi-camera sitcoms are actually making a comeback of sorts. In 2019, the big 4 networks ordered 28 pilots. 13 of them are multi-camera. 2 years ago, only 7 of 33 were multi-camera.
Last Man Standing, Mom, and Roseanne/The Conners are all multi-camera shows still on that do well in the ratings.
