I'd agree with you if the "job" were limited to coaching football. However, for the head football coach at BYU, there is more to the job than just football. The priority for the football program is exposure, and the BYU head coach must be able to fit within that exposure priority. It's not clear that there are any non-LDS coaches that could do that.
