I teach at several universities/colleges.  It started as a side-gig for me but has since become my only source of income.  I have to adjunct at multiple schools to make it worthwhile, but I love being able to teach and work from home.  It can be tough to get an online teaching job, especially without teaching in higher education first, so if she can get in at BYU-I, she should totally go for it. 

Psychology and MFT may not be the "in demand" online teaching topics, but they are out there.
