Then you can cook anything. Low and slow, high heat, moderate heat. Something like the Campchef woodwind with slide and grill functionality + searing extension.
After that I’d do a charcoal grill + cast iron or carbon steel pan if you want to cook over extremely high heat and need a bigger surface than you get on the searing extension. The pan will allow you to do some of what you’d use a griddle for.
Really though just get all three.
