like other wild game in that it's VERY lean. I salt generously with Kosher, add a little pepper, and cook on HIGH heat to rare. When you think to yourself "They need one more minute" it's time to get them off the grill.
Lean meat goes downhill fast if overcooked, antelope almost gets a gritty texture to it. So you have to keep it rare. Medium rare is pushing it. I don't use a thermometer, I just go by touch. On the George Foreman it literally took 2 minutes and they were done.
