Wilson does significantly better than your four comparables when blitzed, but worse under pressure. What does that tell us? Maybe it says something about BYU's receivers ability to get open when the play breaks down. Maybe it suggests that its not worth it to blitz because Wilson adjusts pretty well and it leaves you a man down to cover if he scrambles (seems like Tuiaki's approach). We'd have a better sense for which if we new yards-per-play when blitzed vs pressured. I don't know, but it makes me agree with you that Wilson ought to scramble more when he's getting pressure because the play breaks down, but stick with his current approach when he's blitzed.
