I like using this chuck roast recipe but I pull the roast the last hour and then cube it then put it back into the gravy/veggies to finish. If you don’t have a smoker, then you’d probably be able to just cube it from the beginning I would think.
Smoke chuck roast at 200* for 2-3 hours - season like normal. Last 30 min prepare gravy.
Place roast in gravy, add veggies, foul. Cook at 300* for additional 4-5 hrs or 350* for 3-4. Last hour cube roast.
Gravy
32oz Beef broth (low sodium)
1 can soda/beer (optional)
2 cans cream of mushroom
1 can cream of chicken
1 packet beef stew
1 packet au jus
2 packets beef gravy
2T beef base
Heat and stir until mixed well
1.5 lbs potatoes cubed
1lb carrots cubed
3 or so onions cubed
