Zach Wilson was a 3 star QB recruit (3 stars composite by Scout/247sports, 3 stars on ESPN, 3 stars on Rivals). And his junior year he's a legit Heisman candidate and a likely first (or second) day NFL draft pick.

Khyris Tonga was a 2 star recruit (2 stars on Scout/247sports, 2 stars on Rivals, 3 stars on ESPN). And he's a monster and is projected to be drafted in the 3rd - 5th round or so.

So you can either get lucky or have coaches that have a good eye, but at any rate, star ratings are not the best way to measure the recruiting capabilities of the coaching staff. It takes time to unfold.
