In oil!
Now the age of the oil makes a difference. Many restaurants will let the oil sit for several days because it gains flavor as it ages.
It’s not necessarily more healthy that way……
There is an Irish tavern in San Francisco where their fish and chips are amazing if you get them win the oil is just right. Same thing
