My advice is to sign up for religion classes taught by professors that are not
full time religion professors. The most enjoyable uplifting religion classes I had were taught by professors from other departments or by part time professors. If she's looking for rigorous academic study of religious topics, go for a religion department professor. Reviews on RateMyProfessor.com were useful back in my day, I'm not sure if that's still a thing.

One exception I'll mention is a Church history class I took from Susan Easton Black. It seemed to fall somewhere in the middle of the two extremes but she was very knowledgeable and passionate about Church history, and the class was very interesting.
