I don't get the love affair with crispy bacon, it is way too often turned into
Charcoal. 9/10 at diners it is overcooked and basically inedible.
I would way rather have it chewy than crispy. Crispy is fine when it is just barely crispy but it's rare you find crispy bacon that isn't too crispy a.k.a burnt.
