They only draw what they need and I have found they do better with a little "overhead" in the supply. Burned out a couple of 12V 1A adapters, but the 3A seem to be working better.

Let's say a device requires 5V 1A. Would it damage the device if the input was 5V 2A?

The device should only draw as much current as it needs.
