Always book one way if the price is the same.
Found out the hard way that if you miss the outbound flight, they automatically cancel the return flight.
But yes, often do different airlines if it makes sense.

Yes. Google Flights will usually tell you the cheapest way to get there, which sometimes has different airlines.
