Milk becomes sour and chunky, but eggs just have an expiration date because the government mandates it. There is a great myth busters about expiration dates.
Please don’t throw away expired eggs, unless you are keeping them at room temperature like they do in France as long as they smell fine they won’t hurt you. (And if you’ve ever smelled a rotten egg you wouldn’t ever be tempted to eat it.)
