Pappy's Choice Seasoning overnight. Smoke at 225 for 2-2.5 hrs. Sear on grill
or in cast iron pan.
Make sure you take it off the smoker at about 5° less than what you want the finish temp to be.
Let it rest 15 minutes before cutting and serving.
