There may be blackout dates. You can't see the calendar until you redeem.

Also, if there are no dates that work for you, you can unredeem and get the points back and save them for later.

There are rolling windows. Right now, the one we are in ends in May, it has shown that for a little while now. Some time soon they should open up more months. I don't know how far out it will go but I think it should extend through the end summer.
