If you're going through Moab, the Grand Canyon is way out of the way.
Going through Moab, you have Arches National Park right off the highway, which is really cool, but it often gets too many visitors, and they close off entry.
One of the coolest views in the whole world is Dead Horse Point--it's maybe 30-40 minutes of a detour, then back to the highway, but worth the view.
