It's about the viewership, not about the town size
Alabama had multiple games last year with 18M+ viewers. Trevor Lawrence has broken 20M viewers multiple times.

Zach Wilson has never had anywhere near that level of attention. Over a combined 3 years, Zach Wilson has had 22.8M viewers tune in for his games. And that's not unique viewers, since a lot of those are likely repeat viewers as well.

So it doesn't matter that Provo is substantially larger than Clemson, South Carolina. Or that BYU has a broad geographic fan base. The truth is that BYU (and Zach Wilson) hasn't had the viewers the way that major P5 schools (think Alabama, Ohio State, Clemson, Oklahoma) or even middling P5s (think Utah and TCU) or UCF all have.

In one single game with the Jets this season, it's likely that more people will see Zach Wilson play than saw him in his entire college career. BYU just doesn't draw those sorts of numbers.
