Yep, green peppers completely dominate a dish. There is a reason that most trained chefs rarely use it
and when they do they cut it smaller and cook it down so it loses some of the astringency and is more mellow. It's useful for sauces and salsas because of that, but in other applications give me red/orange/yellow any day.
