as the bread goes, that is pretty easy, but the taste will vary by location. I've used starters from San Francisco and after a while they change and the natural yeasts take over. But with the no knead recipies bread is a cinch. Too bad my wife is diabetic and someone in my household is allergic to milk products. No chowder for me. And no the substitues don't taste good.
