So my wife and I have traveled a bit in Spain over the years and she wanted to go to Galicia for our Anniversary so we're flying into Lisbon and renting a car for 8 days. I'm looking for suggestions to spend a night or two in Portugal. We've visited Lisbon for a long weekend so we're not really planning on staying there for more than a night before we leave.

I like small towns with less visited sites and good food. The only place we're set on visiting is Santiago de Compostela and I'll meet up with a friend in Leiria for lunch but other than that I'm just looking for cool places to go.
