Turns out I have some data on this

This was initially designed to show the difference between BYU scheduling in the MWC and Independence eras, so looks over the last 20 years.

[spoiler alert, there isn't any difference in difficulty. The only change is replacing mediocre (i.e. 61-100 ranked) teams with abysmal (ranked 151 or worse teams]

But it does show that there's limited difference between BYU and Cincy.

BYU basically takes on one extra pretty good (26-20) team and one bad team (101-150) whereas Cincy takes on two mediocre (61-100) teams.  Even Boise plays a similar percentage of really good teams (1-25) as BYU does now.

Utah and Alabama are also included to show the range of P5 schedules.  Utah plays in the weakest P5 conference and constantly gets grief for scheduling a weak OOC (BYU, G5, FCS) so probably has one of the weakest P5 schedules out there, while Alabama plays in the toughest conference and has additional playoff/bowl matchups against elite teams.
