I was in the stands in the end zone and had a clear view of the gaps between the linemen. It got to the point where it was frustrating to see, over and over, the lineman tap the center and then in my head count "one thousand one ... hike". They may have hesitated a few times but I do not remember seeing them. It was certainly no where close to 1/3 of the time like you said.
