Day before you need to brine the wings in pickle juice for 2-3 hours. Then put them on a wire rack on a cookie sheet and dry them out in the fridge. Season them with Meat Church Holy Voodoo.
Next day smoke them at 350 for like 30 minutes. Get to a temp of 160-170. Then pull them off and flash fry them in oil for 2 minutes. Sauce them after if you want to.
