Any of the river walks. Can also do hanging garden and maybe the emerald pools.
River walk up to the opening of the narrows is the easiest and still beautiful hike.
Sit at a restaurant in Springdale with a nice view. Have lunch at a picnic table in the park by visitors lodge.
Can drive up to Kolob and see some awesome stuff from the road. Also the drive up from New Harmony has great views from lookout points.
