1. Trying to figure out what the defense is doing. If you have it figured out pre-snap you are already winning. BYU does a terrible job of disguising coverages.
2. Getting hit consistently. It means you have to make decisions quickly and in time QBs will start to just get rid of it early to avoid getting hit.
NFL defenses are all predicated on these two concepts. Good college defenses are predicated on these two concepts.
Ask Nick Saban the best way to slow down a good QB and he will tell you the two items above. Ask Bill Belichick and he will tell you the same thing.
Ask a QB if the most stressful part of his job is having 5 seconds to pass against an eight man zone where they give you the underneath route every time.
