Even though people rarely use trucks to their limits, you get a truck because of the things it could theoretically do. You get a truck because you could drive hundreds of miles across a desert, or go deep into the mountains and chop a bunch of wood and bring it home to keep your family warm, or bug out and go off the grid for a month if things hit the fan. Most of the time, the things I think about doing with a truck are silly, emotional, and have no logical connection to what I end up doing - but having a truck without the capability to do those things would kind of feel like I'd settled for less.
But there are some realistic, logical, use cases where an electric truck would do poorly. About 1x a year, I go on an ATV campout near Moab. I can drive there and back on a full tank of gas, regardless of whether I'm towing a trailer/small camper, etc. I couldn't do that in an EV truck, and the area is remote enough that I'd likely need to stop somewhere along the way to charge up, just to ensure that I could have enough juice to make it the rest of the way in, and then back to the charger for the drive home. The same is true for other things (family reunions, scout camps) that also happen about 1x a year, often in remote areas - I'd have reduced range because of whatever I'm pulling, and would likely have to plan my charging (charge somewhere on the way in so that I can get in and then back out to the charger). In the end, that's a lot of extra hassle and anxiety.
Is it enough hassle to outweigh the convenience and economy of around-town driving? Probably not, but that, plus the emotional capabilities angle is enough to push me toward a gas truck.
