It's meant to be a unique place where young adults grow in faith and education, to prepare them to live a different lifestyle than most of the world does. I don't necessarily agree with all the dress and grooming standards either, but saying BYU should simply say "do whatever you want, because you can dress how you want in some jobs" goes against most of what BYU is for.
