I wasn't sure if it would work, since you usually need to get the oil really hot so it only has to cook for like 30 seconds so the ice cream doesn't melt, but it turned out probably just as good as oil-fried and was so much easier.
I rolled a large scoop of vanilla ice cream in crushed-up corn flakes, rolled that in cinnamon pancake batter, then rolled in more corn flakes. Wrapped each ball in plastic, put in the back of the freezer for several hours so it becomes rock-hard. After heating the air fryer up, cooked it for 3 minutes at 400 degrees.
