We’ll marbled, reverse seared tri-tip on a smoker
Hickory, Mesquite, or Post Oak smoke

Blackened Saskatchewan rub liberally all over the tri-tip. Great flavor and it makes a nice slightly crunchy bark.

Smoke at 225 until internal temp at 125 (approx. 1 hour)

Straight into a screaming hot cast iron pan to sear all sides

Rest for 10 min, slice against the grain, serve with a good chimchurri
