As to your smoker having a hard time
coming up to temp, have you cleaned it lately? If the smoke pot is full of ashes, you'll have a hard time getting the pellets burning.

Yes. Pork shoulder is about the most forgiving cut there is. As long as you get it to temp, it will be ok

I cleaned it yesterday, but weirdly, the ashes wont stay I the cup.
