As suggested, I did crank up the temp in the oven to 350 and a 1/2 hour later, they were done. I pulled them out to rest for 45 min ( all the time I had) then shredded them all up and hauled them to the church.
Our ward isn’t very big and the amount of meat I brought would have been enough for everyone, but I was shocked to see there were 6 others who cooked 4 butts each. The folks who bought for the barbecue didn’t know each package had two and I don’t think they understood how far the meat would go. We had maybe 60-70 people there. They were sending all the families home with a couple gallon-sized bags of meat and bags of buns.
In the end, the meat turned out good, the barbecue was a success, but it did take us 3 hours to clean the oven.
