Bryce and Zion at the top of the list. Skip Cedar Breaks, it's just a mini Bryce

If you stay near St George snow canyon state park is cool. A few miles from cedar city is the Parowan Gap with petroglyphs (maybe an hour stop). You really can't go wrong in southern Utah, but Bryce and Zion are absolute must sees (don't skip the kolob canyon district of Zion).

Do the hike to Calf Creek Falls near Escalante if you can. It's on Hwy 12 east of Bryce. In fact, just driving Hwy 12

Calf Creek falls + spooky and peek a boo and maybe zebra depending on weather is a great day.

If you're up for it, Coyote gulch/Hamblin Arch + Hole in Rock in that area too.

What activities do you want to do? Hiking, fishing, mtn biking, auto tour, etc?

If you've been to Zion/Bryce and/or don't like crowds, then SingleStrap's advice above is good. I love that whole area

It is only 1h20m drive between the two. No reason to budget a day for travel.

I put Zion at the bottom of my list but I've been there and I hate crowds. But maybe the crowds won't be as bad mid-week
