Walnut Canyon is awesome, and right off the 40. Also, If your willing to take a
30 min detour north of Flagstaff the Wupatki ruins are great too.

Meteor Crater? Seligman? Mojave National Preserve is a great place to go off roading but I wouldn't hike it.
