I second and third the Tanzania recommendations. Uganda is great for
gorilla trekking and seeing the countryside. Amazing farming. Infrastructure is definitely third-world. Rwanda is much nicer/cleaner (and more modern) than Uganda, but Gorilla trekking costs about twice as much in Rwanda (just across the border in the same jungle region). The gorilla experience exceeded my expectations, but I found the whole Serengeti experience in Tanzania amazing. The scenery and wildlife in the Serengeti is legit! Wasn't quite as impressed with the Ngorongoro Crater, but still pretty cool. 3 days of safari was plenty. Unless you go somewhere really high-end, food was pretty similar in all of those places.
