Because Lucas demanded it; movie theatres improved first their audio then video equipment. He demanded it to show Star Wars.
Because the movie had such a huge audience, theaters complied. Every movie experienced since Star Wars is better because of Star Wars.

Of the sci fi movies you listed above, all of them except 2001 owe their special effects to ILM… which was formed because of Star Wars.
Blade runnner and The Matrix wouldn’t have been nearly as awesome without visual and audio techniques that grew out of Star Wars.
It’s that side of Star Wars that is important. Not the story or the dialog.
