For reference, here was Utah's first two Pac12 schedules in 2011-2012:
Included is the opponent's final record.

2011 (8-5):

L @ USC (10-2) - Toughest opponent
W @ BYU (10-3) - Obvious best win
L Washington (7-6) - Best home game
L ASU (6-7)
W @ Pitt (6-7)
L @ Cal (7-6)
W Oregon St. (3-9)
W @ Arizona (4-8)
W UCLA (6-8) - Next best home game
W @ WSU (4-8)
L Colorado (3-10)
Teams not played: Oregon (12-2), Stanford (11-2)

2012 (5-7):
W Northern Colorado
L @ USU (11-2) - Toughest opponent
W BYU (8-5) - Tied for best home game, obvious best win
L @ ASU (8-5)
L USC (7-6) - Tied for best home game, but meh opponent
L @ UCLA (9-5)
L @ Oregon St. (9-4)
W Cal (3-9)
W WSU (3-9)
L @ Washington (7-6)
L Arizona (8-5)
W @ Colorado (1-11)
Teams not played: Oregon (12-1), Stanford (12-2)

From the perspective that many here have of Texas and OU, there were really only 2 blockbuster home games each year (maybe only 1 in 2011 if you don't count UCLA). Interesting that Utah didn't play the two best teams both of those years. Utah's relatively bright opening year in the Pac12 was aided by a fairly weak schedule. And yet, if you ask Ute fans I'm sure they'd say they didn't care and were just beyond excited to play a Pac12 schedule.

My point is that we shouldn't be disappointed if we only get 1 "good" team to play at LES. And a slightly easier first schedule isn't necessarily a bad thing.
