How about the Utah Mammoth?
I've been trying to think of different names than the common popular ones (like Yeti, Golden Eagles, etc). Utah Mammoths just popped into my head. Mammoth bones have been found in Utah and they're associated with cold weather. I think it's be a fun mascot
