Fully smoking/cooking. No fryer.
I’ll dip them in Cornstarch, then smoke them and remove and toss in a bowl the wing dust flavors I want to use.

You have a lot of leeway. I think I usually do about 285ish, but you could do 350 and still be fine IMO.
