Not a blog, but I follow this guy on TikTok and really like his recipes.

He's also on Instagram.  My doctor told me I have high blood pressure a few months back and I've been counting calories and using his stuff to meal prep for my wife and I each week and have been having a lot of success.  He's got a lot of meals that come in around 500-600 calories and have been super satisfying for me.  It's a lot of subsitutions to make meals that are like 70% as delicious as the actual dishes but significantly healthier.  My favorites are his Spicy Steak Rigatoni and the Butter Chicken.
