You can cook it low and slow to the internal temp.
you're looking for (e.g., 130/135) and then let it rest once it gets there. After letting it rest you can put it back in the oven at 500 for ~8 minutes or so to get a nice crust. You can then serve immediately as it has already rested.

Did this with prime rib for new years and it turned out great.
