Because demand for pizza is totally elastic. The raise the price and build it in people order less pizza.
Let the customer decide what to tip and how much. Keeps demand from drying up.
Just like airlines. Everyone wants bags to fly free and free seat assignments and priority boarding and all that crap. Why? If I don’t want to pay for it I shouldn’t have to. Give me the lowest price possible and let me choose what to pay beyond that.
Once you start building it all in you see demand soften.
