The whole incognito thing is a myth.

The jump in price can always be explained. Sometimes the cheaper ticket was booked. Sometimes adding more people raises the prices, or choosing seats. Or you search somewhere like Kayak but when it sends you to Delta it is showing you the "main" fare instead of the "basic" fare that Kayak was showing.
